If the minimum wage rate changes mid-shift (like a night shift), will the employee working have two different pay rates in the same shift?

Yes. For an employer who follows the default 12:01 a.m. to midnight definition of a workday, an employee who works a night or graveyard shift will have two different pay rates for that particular shift: hours worked at one minimum wage rate until midnight, and the higher minimum wage rate for hours worked from 12:01 a.m. and beyond.
